A labor of love, Café Gallo Bravo is produced on a teeny-tiny scale by two people in partnership with a bountiful piece of land. Every part of the picking and processing is done by us and by hand - no machines or electricity are involved. We pick the ripest mature beans each week, separate the fruit from the bean with a hand mill, dry the beans in the sun, pound the cascara off with a mortar and pestle, and then roast the beans in our home. We produce primarily for ourselves, and sell only the small surplus. These beans were roasted on April 14th.
